but, when will we eat the cuy?

ny times just did a lovely story about peruvian inspired restaurants in san francisco.   the only problem is, no one mentions or eats the cuy!   this is not peruvian food.  this is peru conveniently forgetting it's inca roots and sending a number of vaguely ethnic dishes to san francisco's tables.

i want to read about hipster organic farmers raising cuy in their backyards to bring the delicacy/revulsion to america.  that is peru!  yes.
