the "chowk" basic indian sauce recipe

if you ever wanted to cook indian food, here's how:

1 medium yellow onion, chopped
2-3 tomatos that are hard. you probably wouldn't find them appetizing raw. chopped
2 cloves garlic
2 small green peppers chopped
dried red pepper (i use them whole, some people grind this into a powder)
garam masala, or some masala mix you can buy in a box at the indian store

1. start by putting the above ingredients in a pan and sauteeing. don't overdo the salt/garam masala at first.

2. when the onions are yellow (about 7 minutes), add your vegetable(s) of choice. i prefer to precook the veggies a bit if they are too hard. ideally you want the veggies sauteeing less than 10 minutes so precook accordingly

3. mix it all up. add more salt/garam masala and add dried pepper. add some lemon.

4. taste at about 20 minutes in. add whatever else is required, some more lemon. cilantro. take off the heat and eat.

for veggies, this works pretty good with all veggies, but particularly well with cauliflower or lentils. for lentils, you actually reverse the dish, the lentils are cooked separately and the sauce added into the lentils when you have about 10 minutes left to cook the lentils.
